Filet Mignon with Balsamic Reduction.

Basic recipe:
Salt & pepper steak on both sides. Crush the peppercorns in a mortar first and then patted onto the steak.
Heat heavy skillet on medium-high until hot.
Add some olive oil + butter + minced garlic + a splash of aged balsamic.
Add steak. Cook about 3.5 minutes on each side (for rare).
Take steak off and set on a plate.
Pour a splash of white wine to deglaze pan. Add a wee bit more balsamic.
Reduce for about 3-4 minutes.
Slice steak and pour sauce over slices.
Serve with vegetable side dish
